Sautéed Zucchini
- 2 Tbs. Olive Oil
- 1 cup Onion, chopped
- 4 small Zucchini, cut crosswise into 8 pieces then quartered lengthwise
- 1 clove Garlic, minced
- 1 Yellow Bell Pepper, cut into 1/4-inch strips
- 1 Red Bell Pepper, cut into 1/4-inch strips
- 2 Mild Green Chilies, coarsley chopped
- 1 cup fresh Plum or Roma Tomatoes, coarsley chopped
- Salt and freshly ground Black Pepper to taste
- 1 cup Parmesan Cheese, grated
Instructions:
Warm the oil in a large skillet over medium-high heat. Add the onion and sauté for about 2 minutes.
Add the zucchini and sauté until lightly browned, about 5 minutes.
Add the garlic and sauté for 1 minute more.
Add yellow and red bell peppers, chilies and tomatoes. Cook, stirring occasionally, for about 5 minutes. Season with salt and pepper.
Serve hot with a sprinkling of Parmesan cheese.
