Stewed Tomatoes
- 2 1/2 cups canned diced tomatoes (6 large fresh, diced)
- 1 tablespoon minced onion
- 1/2 cup chopped celery
- 1/4 cup chopped green pepper
- 1/2 teaspoon salt
- 1/4 teaspoon paprika
- 2 teaspoon brown sugar
- 1 teaspoon basil
- 2 tablespoons olive oil
- 1/2 cup bread crumbs
Instructions:
Over med. heat saute the onion, celery and green peppers until soft. Add the tomatoes and remaining ingredients except bread
crumbs. Simmer for 10 minutes (20 minutes for fresh tomatoes) stirring occasionally. Just before serving add the bread crumbs
and stir for a couple of minutes until thickened.
