Sweet Potato Casserole #5
- 5-6 large sweet potatoes (garnet yams work best)
- 2 tablespoons butter or margarine
- 1/4 - 1/2 cup orange juice
- 1 can pineapple tidbits drained
- 1-2 tablespoons brown sugar
- Marshmallows
- 1/4 - 1/2 cup Pecans (per your preference)
Instructions:
Boil sweet potatoes until soft enough to be pierced with a fork.
Remove from water, cool and peel. Mash with hand masher, or slotted spoon. Add in brown sugar, butter and orange juice. Whip with hand mixer. Stir in pineapple tidbits. Spoon into casserole dish. Bake at 350 for 25-30 minutes until heated through. Top with marshmallows and pecans. Bake for 5-10 minutes more until marshmallows are melted.
