 Peach Cobbler
 
 Ingredients:
 2 cups fresh peaches
 1/2 cup sugar
 1 egg, beaten
 2 eggs, separated
 1 Tbs. fine sugar
 1 Tbs. cornstarch
 1/2 tsp. almond extract
 
 Instructions:
 
Peel and slice peaches, add 1/2 cup sugar and beaten egg; stir.
Pour fruit mixture into a well greased baking pan.
With a hand beater, beat the egg yolks until they are a very pale yellow.
Add the sugar, almond extract & cornstarch and continue beating until mixture is fluffy
In a separate bowl, beat egg whites until stiff; fold into egg/sugar mixture
Pour the batter over the fruit and bake for 30 minutes.
 This is excellent served while still warm with vanilla icecrea, or creme anglaise. 
 
 Pear Cranberry Crisp
 
 Ingredients:
 Topping
  1 1/2           cups  pecans, chopped
     3/4           cup  flour
     1/2           cup  granulated sugar
     1/4           cup  brown sugar, packed
  1 1/2      teaspoons  cinnamon
     1/2           cup  unsalted butter, cold
                        Filling
  1 3/4           cups  cranberries, fresh or frozen
     1/2           cup  granulated sugar
  1           teaspoon  ground cinnamon
     1/4           cup  cranberry juice
  2 1/2    Tablespoons  flour
  6               ripe  fresh pears, peeled, cut into 1/2" cubes
 Instructions:
 
Preheat oven to 350 degrees.
In a mixing bowl combine pecans, flour, sugars and cinnamon.  Using a pastry blender, cut in butter until mixture is crumbly.  * This is where we add the 1/2 cup oats.  Set aside.
In a saucepan combine cranberries, sugar, cinnamon, cranberry juice and flour.  Cook over medium heat, stirring often, about 10 minutes or until mixture is thickened and cranberries have burst.   Stir in pears
Pour the filling into an ungreased 8X12 baking dish.  Sprinkle evenly with topping mixture.  Bake in oven for about 30 minutes or until golden brown and bubbling.
Serve warm.
 
 
 Apple Crisp
 
 Ingredients:
 4               cups  apples, sliced 
     2/3           cup  brown sugar
     1/2           cup  flour
     1/2           cup  oatmeal
     3/4      teaspoon  cinnamon
     3/4      teaspoon  nutmeg
     1/3           cup  butter, softened
 Instructions:
 
Heat oven 375 F.  Place apples in greased square baking dish.  Blend remaining ingredients until crumbly.  Spread over apples.
Bake 30-35 minutes.
Serve warm with ice cream.
 
 
 Rhubarb Apple Crisp
 
 Ingredients:

                        TOPPING
     1/3           cup  lightly packed brown sugar
     1/3           cup  oats
  3        tablespoons  flour
  2        tablespoons  margarine, melted
                        FILLING
     2/3           cup  granulated white sugar
  3        tablespoons  all purpose flour
  2               cups  slices apples
  3               cups  rhubarb, diced
 Instructions:
 
Combine all topping ingredients in a bowl, and mix well. 
In a separate bowl, combine sugar and flour 
Add fruit to flour mixture, and toss to coat. 
Spoon fruit mixture into a 2 litre baking dish, sprinkle with topping mixture 
Bake at 375 for 40-50 minutes until fruit is tender.
