April is the month of fools - and who can resist a fool,
especially one as attractive and satisfying as
the one below?
This charming fool will mix up in minutes and take
just a short while to chill and be ready to be DEVOURED -
and it will be - by appreciative friends and family.
While fresh berries are unquestionably best because they
have no extra moisture content that so often accompanies
frozen fruit, you can use either.
Blackberry Fool
2 cups blackberries (or raspberries)
1 cup whipping/heavy cream
2 tsp. confectioner's (powdered) sugar
1 tsp. vanilla
1 tsp. blackberry brandy
or other fruit liqueur (optional)
Gently smash the berries with a fork until they are
separated into pieces. Reserve all juice.
Whip cream, slowly adding confectioner's sugar,
vanilla, and brandy. When stiff peaks form, slowly
stir in berries until well-incorporated.
Spoon mixture into pretty dessert cups or glasses
and chill until firm. Present triumphantly to four.
Make sure one of the four is YOU.
