Indian-Style Chicken and Apples - two berries

I can't remember where I found this recipe, but it's very tasty and different.

Ingredients

1 boneless, skinless chicken breast, cut into 1/2-inch cubes
1 medium tart apple, cored and diced
1 tsp curry powder
1 tbsp honey
2 stalks celery, thinly sliced
2 tbsp raisins
chopped fresh parsley

Cooking

  1. Combine chicken and apple in a large mixing bowl. Sprinkle with curry powder; add honey. Stir well to blend.
  2. Separate chicken from the apples and set aside.
  3. Spray heavy skillet or wok with non-stick cooking spray and warm over medium-high heat; stir-fry celery for 1 minute.
  4. Add chicken; stir-fry until chicken is cooked.
  5. Add apples, raisins and parsley, stirring until thoroughly heated (about 1 more minute).
