Beef Burgundy Crockpot
2 lbs stew meat
1 can cream of mushroom soup
1 can Campbell's Golden Mushroom soup
1 pkg dry onion soup mix
1 can or jar of mushroom slices or pieces
1/2 to 3/4 cup red burgundy cooking wine.

Brown the stew meat in 2 tbsp oil. Drain and place in crockpot with other ingredients. Mix well and bake in crockpot on low for 6 hours. Serve with rice or noodles.

Macaroni and Cheese
1 8-oz pkg macaroni, cooked and drained
2 tbsp oil
1 13-oz can evaporated milk
1 1/2 cups milk
1/2 tsp salt
3 cups shredded sharp processed cheese
1/4 cup melted butter
2 tbsp minced onion

Toss cooked macaroni in 2 tbsp oil. Add all remaining ingredients. Pour into lightly greased crockpot. Stir well. Cover and cook on LOW 3 to 4 hours. Stir occasionally.

Crockpot Beef Pot Roast
1 1/2 lb- 2lb. pot roast meat
1 dry package of Good Seasons Garlic Dressing
1 dry pkg of Italian (or Zesty Italian) Dressing
1 can of beer (your choice-not dark)

Place one envelope of Good seasons in bottom of crock pot. Place meat on top, top with other package of dressing and pour beer over all. Let cook 8-10 hours on low. If your a gravy maker, the sauce made into a gravy is YUMMY! I serve this with potatoes.

Crockpot Beef Stroganoff
2 lbs top round steak, sliced thin across the grain
1 lb fresh mushrooms, sliced
1 medium onion, sliced
1/4 tsp thyme
3/4 cup dry sherry
3/4 cup beef broth (Swansons)
3/4 tsp dry mustard
1/4 tsp garlic salt

Put all this in the crockpot, stir well and cook on low for 8 hours. Turn heat to high and mix 1-1/2 cup sour cream 1/2 cup Wondra flour, cake flour works too, heat on high for 40 minutes. Serve over rice or noodles.

Crockpot Chicken Cacciatore
1 large onion, thinly sliced
1 1/2 lb. skinless, boneless chicken breasts
2 (6 oz each) cans tomato paste
8 oz. fresh sliced mushrooms
1/2 tsp. salt
1/4 tsp. pepper
2 cloves garlic, minced
1 tsp. oregano
1/2 tsp. basil
1 bay leaf
1/4 c. dry white wine
1/4 c. water

Put sliced onion in bottom of crock pot. Add chicken pieces. Stir together tomato paste, mushrooms, salt, pepper, garlic, herbs, white wine and water. Spread over chicken. Cover; cook on Low 7 to 9 hours (High: 3 to 4 hours). Serve chicken pieces over hot spaghetti or vermicelli. 4 servings.

French Onion Soup
1 quart beef bouillon or brown stock
3 medium yellow onions, thinly sliced
3 tbsp butter
1/2 tsp salt
1 tbsp sugar
2 tbsp flour
1/4 cup dry vermouth or cognac (optional)
1 cup grated Parmesan cheese

Pour bouillon or stock in corckpot. Cook onions slowly in butter (about 15 minutes) in a large covered skillet. Stir occasionally. Uncover and add salt, sugar, flour and vermouth. Stir well. Add to stock in crockpot. Cover and cook on LOW 6 to 8 hours. (HIGH 3 hours). Before serving, top with grated cheese.

Crockpot Honey Mustard BBQ Short Ribs
3 to 3.5 lbs beef short ribs
1 tablespoon dijon-style mustard
1 garlic clove -- crushed 1/8 teaspoon pepper
1 cup bottled hickory smoked barbecue sauce
2 tablespoons cornstarch
2 tablespoons cold water
cooked noodles

Place short ribs in slow-cooker. In medium bowl, combine mustard, garlic, honey, salt, pepper, and barbecue sauce. Pour over ribs. Cover and cook on LOW 6 to 7 hours or until tender. Refrigerate several hours or overnight. Skim any solidified fat from top. Remove ribs; heat in microwave or conventional oven. Dissolve cornstarch in cold water. Add to sauce from ribs. Cook and stir in microwave or on stovetop until hot and slightly thickened. Pour hot sauce over warm ribs. Serve on cooked noodles.

Crockpot Seafood Chowder
1 1/2 pounds fish fillets (haddock,cod,etc.)
1/4 pound bacon -- diced
1 medium onion -- chopped
3/4 cup green onion (with tops) -- chopped
2 medium potatoes -- pared and cubed
1 1/2 cups water
1/2 teaspoon salt
1/4 teaspoon pepper
1 13 ounce can evaporated milk

Cut fish into bite-sized pieces. In small skillet, saute bacon and onion until golden. Drain and put into Crockpot with fish. Add all remaining ingredients except evaporated milk. Cover and cook on low 6-9 hours or until potatoes are tender. (High 31/2 hours) Add evaporated milk during last hour. Serves 8

Crockpot Spaghetti Sauce
1 pound ground beef
chopped onion -- to taste
2 cans tomatoes -- (1 lb.) cut up
1 can tomato sauce -- (8 oz.)
1 can tomato paste -- (12 oz.)
1 cup beef broth (bouillon)
2 tablespoons parsley
1 tablespoon brown sugar
1 teaspoon dried oregano leaves
1 teaspoon dried basil leaves
1 teaspoon salt
1/4 teaspoon pepper

Brown meat and onion in fry pan, drain off fat; transfer to crock pot. Add remaining ingredients. Cover and cook on low for 6-8 hours. Serve over hot spaghetti. Can be made ahead and frozen.

Crockpot Swiss Steak
1 1/2 lbs. round steak
1 chopped carrot
1 cup chopped celery
1 can tomato sauce
1 onion, sliced
2 tbsp flour
1 tsp. salt
1/4 tsp. black pepper

Cut steak into serving pieces. Combine flour, salt & pepper & sprinkle over meat. Mix well & put into crock pot. Add carrot, celery, & onion. Pour tomato sauce on top. Cook on low for 8 to 10 hours.

Crockpot Ham and Scalloped Potatoes
6 to 8 slices of ham
8 to 10 medium potatoes, peeled and thinly sliced
2 onions, peeled and thinly sliced
1 cup grated cheddar or american cheese
1 10-ounce can cream of celery or mushroom soup
paprika (optional)

Put half of ham, potatoes and onions in crock-pot. Sprinkle with salt and pepper, then grated cheese. Repeat with remaining half. Spoon undiluted soup over top. Sprinkle with paprika. Cover and cook on low 8 to 10 hours. (High: 4 hours).

Pork Chops Au Gratin (Paula aka Edelweiss)
4-6 pork chops (I use boneless)
2 cans cheddar cheese soup (undiluted)
4-5 potatoes - sliced (I keep skin on)
1 onion
salt/pepper and Lawry's Season Salt (use on everything!)

Slice as many potatoes as you want and layer in the bottom of the crockpot. Add 1/2 the onion, then arrange pork chops on top, add seasoning and rest of onion. Cover pork chops completely with the cheddar cheese soup (no water). Cover and don't peek for 8 hours on low, or 4-5 on high. I usually serve with hot bisquits and green beans. The pork will literally fall apart, so be careful when taking out of the crockpot.

Layered Enchilada Casserole (JulieAg945)
1 can whole tomatoes
1 onion, cut into pieces
1 garlic clove, minced
1/2 tsp. ground red pepper
1/2 tsp. salt
1 can tomato paste
1 lb. ground beef, browned
2 cups grated cheddar cheese
9 corn tortillas

To prepare sauce, blend tomatoes and liquid with onion and garlic in a blender or food processor. Pour into medium size saucepan. Add red pepper, salt, and tomato paste. Heat to boiling, then simmer for 5 minutes. Place 3 tortillas in bottom of crock pot. Layer on tortillas 1/3 of ground beef, 1/3 of tomato sauce and 1/3 of the cheddar cheese. Repeat each layer two more times. Cover and cook on Low 6-8 hours.

BBQ Spoon-burgers (JulieAg945)
1 1/2 lb. ground beef
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1 clove garlic, minced
1 Tbls. Worcestershire sauce
1 tsp. dry mustard
1 tsp. salt
1/2 tsp. paprika
1/8 tsp. pepper
1 6 oz. can tomato paste
3/4 cup water
2 Tbls. vinegar
2 tsp. brown sugar

Brown ground beef in skillet, drain fat. Combine all ingredients in crockpot; stirring well. Cook on low for 6-8 hours or on high for 3-4 hours. Serve over warm hamburger buns, noodles or rice.

Sweet and Sour Chicken Dinner (JulieAg945)
6 med carrots, cut into 1/2 chunks
1/2 C green pepper, chopped
1/2 C onion, chopped
3 boneless chicken breasts
10 oz jar sweet-sour sauce
1 can pineapple chunks (16 oz), drained
3 T cornstarch
3 T cold water
Hot cooked rice

In crockpot place carrots, green pepper and onion. Top with chicken breasts. Pour sweet- sour sauce and pineapple chunks over all and cover. Cook on LOW for 7-10 hours (or high for 3 1/2-4 hours). Remove chicken, keep warm. Blend cornstarch and water and stir into juices. Cover, and cook on HIGH for 10-15 minutes, or until thickened. Serve over hot cooked rice.

Cream Cheese Chicken (JulieAg945)
1 frying chicken -- cut up
2 tbsp melted butter or margarine
salt & pepper -- to taste
2 tbsp dry Italian salad dressing
1 can condensed mushroom soup
6 oz cream cheese; -- cut in 1" cubes
1/2 cup sauterne wine or sherry
1 tbsp onion -- minced

Brush chicken with butter and sprinkle with salt and pepper. Place in a crockpot and sprinkle dry mix over all. Cover and cook on low for 6 - 7 hours. About 45 minutes before done, mix soup, cream cheese, wine, and onion in a small saucepan. Cook until smooth. Pour over the chicken and cover and cook another 45 minutes. Serve with sauce.

Ravioli Casserole (JulieAg945)
1 1/2 lbs lean ground beef
1 medium onion -- chopped
2 cloves garlic -- minced
1 (28 oz) can diced tomatoes
1 15 oz) can tomato sauce
2 tsp Italian seasoning
1/4 tsp pepper
1 lb. bow-tie pasta or fettucine, -- freshly cooked
1(10 oz)pkg frozen chopped spinach, defrosted - moisture removed
2 cups ricotta cheese
1/2 cup Parmesan cheese -- freshly grated

In a large skillet over medium-high heat, cook the ground beef, onion and garlic, stirring often to break up lumps, until the meat loses its pink color, about 5 minutes. Tilt the pan to drain off excess fat, then transfer the beef mixture to a 3.5 quart crockpot. Add the tomatoes, tomato sauce, Italian seasoning, and pepper, and stir. Cover and cook on low for 7 - 8 hours. Stir in the cooked pasta, spinach, and ricotta and Parmesan cheeses, and cook for 5 more minutes.

Crockpot Italian Beef and Potatoes
1 lb lean ground beef
1/2 small onion, chopped
1 box scalloped potatoes and sauce mix
1 (16 oz) can diced tomatoes
1 (8 oz) can tomato sauce
1/2 cup water
1/2 tsp oregano
1/2 tsp garlic powder
1/4 tsp basil
1/2 tsp salt
1/4 tsp pepper
1 cup mozzarella cheese, cubed

Brown ground beed and onion. Drain well. Put in bottom of crockpot. Mix in potatoes and sauce mix. Add remaining ingredients except cheese. Cook on low for 5 to 6 hours. Turn to HIGH and stir in cheese. Let cook for an additional 15 minutes.

Crockpot Stroganoff
2 1/2 lbs round steak, cut into 1/2 inch strips
1/4 tsp flour
1 tsp seasoned salt
1/4 tsp pepper
1/2 tsp paprika
3 tbsp butter or margarine
1 (8 oz) carton of fresh mushrooms, sliced
1/2 cup canned beef broth
1/2 cup water
1 pkg dry onion soup mix
1 cup sour cream

In a plastic bag, mix flour, seasoned salt, pepper, and paprika. Dst meat strips with flour mixture. In a skillet, brown mat in hot butter. Add mushrooms and brown lightly. Transfer to crockpot and stir in water, broth, and onion soup mix. Cook on LOW for 6 to 8 hours. Stir in sour cream. Cover and cook on HIGH for another 30 minutes. Do not boil. Serve over hot buttered noodles.

Crockpot Venison
2 1/2 lbs venison steaks - cut into 2 inch cubes
1 pkg dry onion soup mix
1 can cream of mushroom soup
1/4 cup water

Mix together in crockpot and cook on low for 6 to 8 hours. Sauce will thicken as it cooks and will make gravy for mashed potatoes.

Crockpot Cheesy Chicken
2 small pkgs frozen broccoli (defrosted)
1 (8 oz) pkg sharp cheddar cheese, shredded
1 can cream of celery soup
1 can cream of mushroom soup
2 cup milk

Mix all ingredients together, then put into crockpot. Cook on LOW for 7 to 9 hours.

Crockpot Chicken and Rice
4 frozen, boneless, skinless chicken breasts
1 jar salsa

Place above ingredients in a crockpot and cook all day on LOW (8 to 9 hours). Take chicken out of crockpot and place on a plate. To the chicken juices and salsa in crockpot, add Boil in Bag Minute Rice, stir and cover 10 minutes until all moisture is absorbed.

Chicken and Noodles
2 1/2 to 3 1/2 lb broiler/fryer chicken, cut up
Salt and pepper to taste
2 cups water
1 cup chicken broth
1 pkg (8 oz) egg noodles

Place chicken in crockpot. Seasn with salt and pepper. Add all liquid. Cover and cook on LOW 8 to 10 hours (HIGH 4 to 5 hours). Remove chicken from broth. Turn crockpot to HIGH and add noodles. Bone chicken and cut up meat. Stir chicken into noodles. Cover and cook 30 to 45 minutes, stirring occasionally.
Chili
2 (16 oz) cans pinto or kidney beans
2 (14 1/2 oz) cans tomatoes
1 1/2 lbs coarsely ground chuck, browned and drained
1 small onion, chopped
1/2 green pepper, chopped
2 cloves garlic, crushed
2 to 3 tbsp chili powder
1 tsp pepper
1 tsp ground cumin
salt to taste

Put all ingredients in crockpot. Stir to combine. Cover and cook on LOW 8 to 10 hours (HIGH 3 to 4 hours).

Crockpot Chops
4-6 bone in chops
1/2 c. flour
1 t. dried forund mustard
1/2 t. pepper
1 t. garlic powder
1 can cream of chicken soup
1/4 c. water
2 T. oil
4 potatoes, quartered

Mix dry ingredients. Heat oil. Dredge chops in flour mixture and brown quickly. Place in crock pot. Mix soup and water and pour over chops. Add potatoes. Cook on LOW 4-5 hours.
