CHOPPED APPLE CAKE This makes a nice moist cake and doesn't even need to be frosted! 4 cups sliced apples 2 eggs
Put sliced apples in a large bowl, break eggs over them and stir with a fork. Blend together:
2 cups white sugar 2 cups sifted flour 1 tsp baking soda 1-1/2 tsp cinnamon 1/2 tsp baking pwd 1/2 tsp salt Stir this over the apple mixture. Mix well. Add: 1/2 cup oil (or applesauce for a low-fat recipe) 1 tsp vanilla 1/2 cup chopped nuts (optional) Stir well and bake in a 9 x 13 pan at 325 degrees for 1 hour. |
