SCALLOPED POTATOES

(I got this recipe from my Aunt Evangeline.)

(Serves 4)

Ingredients:
  • 1 can (10 1/2 oz.) cream of chicken soup
  • 3/4 cup milk
  • 1 cup (4 oz.) shredded cheddar cheese
  • 4 medium potatoes, thinly sliced
  • 2 tablespoons finely chopped onion
  • 1/4 teaspoon pepper
  • 1 tablespoon margarine
Directions:
Preheat oven to 350 degrees.  Combine chicken soup, milk, onions, pepper, 1/2 cup of shredded cheese, and potatoes.  (While you are slicing the potatoes put them in the mixture right away so they don't turn brown.)  Mix everything together and pour into a 13"x9"x2" baking dish.  Dot the top with the margarine and sprinkle with remaining cheese.  Bake 1 hour and 15 minutes or until fork tender.
