Coconut Rice

        • Cooked plain rice- 2 cups
        • Oil- 3 tablespoons
        • Coconut oil- 1 tablespoon
        • Mustard seeds- 1/2 tsp
        • Urad dhal- 1 tsp
        • Channa dhal- 1 tsp
        • Cashew nuts- 1 tablespoons
        • Freshly grated coconut- 1 cup
        • Green chilies- 2 (finely chopped)
        • Asafetida- a pinch
        • Chopped cilantro (coriander)
        • Curry leaves- 5 (optional)
        • Salt

        Heat oil in a large pan. Add mustard seeds. When it starts to pop, add urad dhal, channa dhal & cashew nuts. Fry for few minutes until they get roasted. Add green chilies, curry leaves and asafetida. Then add the grated coconut and coriander leaves, stir once and remove from fire. Add cooked rice, coconut oil and mix well until the rice is evenly coated.
