                     Diagonals (Magic Carpet Cookies)

  1                cup  soft butter
     1/2           cup  sugar
  1                     egg
  1         tablespoon  flavoring (almond or vanilla)
  2 2/3           cups  Gold Medal® Flour*
     1/2      teaspoon  baking powder
     1/2      teaspoon  salt

Heat oven to 375°. Cream butter, sugar, egg and flavoring until creamy. Mix dry ingredients and blend in. Divide dough in half. Reserve half for trim. Then roll the remaining dough into 2 rectangles, 12x6 inches on a well floured cloth-covered board. Cut each rectangle lengthwise into 3 equal strips. With spatula carefully lift each strip onto an ungreased baking sheet, placing about 1 inch apart. Spoon reserved dough into cookie press.** If dough is too dry to go through cookie press, work in 1 to 2 teaspoons cream. Using smallest star design, press out in long ropes on each side of each strip and also one down the center. Bake about 10 minutes, or until edges are delicately browned. Cool. Fill in between the rows of "trim" with jelly or Powdered Sugar Icing (below). Carefully cut 1-inch diagonal pieces with a sharp knife. Makes 60 to 70.

NOTES : **If you do not have a cookie press--shape 12-inch long ropes about pencil thickness to place on edges and down center. Print with tines of fork. 
Powdered Sugar Icing: Combine 1 cup sifted powdered sugar, 1/2 teaspoon flavoring and enough cream for spreading consistency. Tint with food coloring, if desired.


Success Tips: 

Use butter in cookie dough. 
Moisten edges of strips before putting on trim--helps to seal it in place. 

Do not use GOLD MEDAL Self-Rising Flour in this recipe.
