                            Chicken Paprikash

  4               3 oz  skinless boneless chicken breast -- cut into 1" pieces
     1/4      teaspoon  salt
     1/4      teaspoon  freshly ground black pepper
  1                cup  chopped scallions
  1                cup  chopped red bell pepper
  2             cloves  garlic -- minced
  1         tablespoon  paprika
     1/2      teaspoon  dried thyme
  1                cup  low-sodium chicken broth
     1/2           cup  light sour cream
  2               cups  hot cooked rice -- white rice

1. Spray a non stick skillet with cooking spray. Cook the chicken pieces well and remove to a plate and keep warm.

2. Add the scallions, bell pepper, and garlic to the pan. Stirring frequently, cook 4-5 minutes or until tender. Stir in paprika and thyme, cook 1 minute more. 

3. Stir in the broth, bring to a boil and reduce heat to low. Simmer for 5 minutes, until reduced by half (Okay, it takes me about 15 minutes for it to reduce by 1/2).

4. Stir in sour cream, and add cooked chicken and simmer for 1- 2 minutes, until heated through. 

5. Serve over the hot rice.
