                         Cream Puffs with Pudding

                        Nonstick cooking spray
  1                cup  water
     1/4           cup  margarine -- or butter
  1                cup  all purpose flour
  4                     eggs
  2               cups  fat free milk
  1            package  fat free sugar free pudding -- any flavor
  2        tablespoons  sifted powdered sugar

1. Coat a baking sheet with cooking spray (parchment paper); set aside. in a medium saucepan bring water, butter, and 1/4 teaspoon salt to boiling. Add flour, all at once, stirring vigorously.Cook and stir until mixture forms a ball that doesn't separate . Cool 10 minutes. 

2. Add the 4 eggs, 1 at a time, beating smooth after each addition. Drop batter by heaping tablespoons, 3 inches apart, onto prepared baking sheet, making 12 mounds. Bake in a 400° oven for 30 minutes of until golden brown and puffy. cool. split cream puffs; remove any soft dough inside. 

3. Meanwhile, make pudding according to package directions and chill. When puffs are cool and prepared, divide pudding amongst the puffs (about 2 tbs. pudding per puff should be right). Spinkle with powdered sugar and serve. Puffs are HUGE!!!
