                               Dad's Kuchen

                        Batter:
  1                cup  milk -- scalded
  2        tablespoons  butter -- margarine, or lard (1 oz)
  1                     egg
  1           teaspoon  salt
     1/4           cup  sugar
  1            package  yeast
  2        tablespoons  warm water -- or 1tbs. milk and 1 tbs. warm water
  3               cups  flour -- to 4 cups, enoughto make a stiff dough
  1                     lemon rind -- grated
                        saffron extract, optional
                        Cinnamon Topping :
     1/2           cup  sugar
     1/4      teaspoon  cinnamon
  1                cup  walnuts -- chopped
                        Struesel Topping:
  2        tablespoons  butter -- or margarine
     1/3           cup  flour
  2                     apples -- , or plums (2 to 3), sliced

1. Mix batter ingredients and allow to rise in a warm place for about 3 hours.

2. Place in 10" ish x 9" ish pan.

3. Choose a topping, and mix topping with fingers.

4. Add nuts and topping, or fruit and topping and let rise for 1 hour.

5. Bake at 350 deg. for about 20-30 min. A brownish crust is nice.

NOTES : This was my Dad's recipe, given to him by his mother (my grandmother). He would bake these the night before Christmas and Easter. Usually they  were mostly gone by the time I got up, but they are delicious! After Dad died in 1997 (age 75), my mother wrote these up for me. I hope you enjoy them! Dad's other recipe I have is Spanish Rice.
