Blueberry Cobbler Bars

1 Cup flour
1 Cup quick-cooking oats
2/3 Cup brown sugar, packed
Grated rind of 1 orange
8 Tbsp butter, softened
2/3 Cup sugar
3 Cup blueberries, fresh or frozen
2 Tsp fresh lemon juice, strained
2 Tsp fresh orange juice, strained
1/2 Tsp cinnamon
1/8 Tsp nutmeg
1 Tbsp cornstarch
  • Combine the flour, oats, brown sugar, and grated orange rind. Use your fingertips to quickly and thoroughly mix in the butter.
  • Press half of the mixture into the bottom of a well-greased 8- or 9-inch square baking pan. Set aside.
  • Put the blueberries, granulated sugar, lemon juice, orange juice, cinnamon, and nutmeg in a non-aluminum cooking pot.
  • Gently bring to a boil over medium heat, cook and stir the berries until they burst and the sugar dissolves. You may want to mash some of the berries to prevent sticking.
  • Dissolve the cornstarch in 1 Tbsp of cold water and stir it into the berry mixture. Continue cooking and stirring until the mixture bubbles and thickens.
  • Let the blueberry mixture cool somewhat, then spread it over the flour-oats crust in the baking pan. Sprinkle the blueberry mixture evenly with the remaining flour-oat mixture.
  • Bake at 350oF for about 40 minutes or until the top crust is slightly browned. Cool completely, then cut into bars.

  • Yield: 8 servings.
