Half-the-Fat Brownies

2/3 Cup flour
1/2 Cup cocoa
1/4 Tsp salt
1/4 Tsp baking soda
1 Cup sugar
1/4 Cup vegetable oil
1 Egg white
1/4 Cup yogurt, skim
3 Tbsp water
1 Tsp vanilla
  • Preheat oven to 350oF. Spray an 8-inch square pan with low-calorie vegetable oil spray.
  • Combine dry ingredients in medium-sized bowl and make a well in the center. Set aside.
  • Combine remainder of ingredients in 2 cup measure and mix well.
  • Pour liquids into well in dry ingredients and blend by hand until all dry ingredients are moistened.
  • Spread mixture in pan and bake 25 minutes.
  • Cool and cut into squares.

  • Yield: 16 servings.
