Bubble & Squeak
3 Potatoes, unpeeled and boiled
1 Zucchini, grated (optional)
4 Cups of cabbage, chopped and blanched
3 Bacon slices, chopped and browned
1/2 Onion, chopped
1/4 Cup chopped ham

- Mash the unpeeled potatoes with your hands.
- Add the rest of the ingrediants except for the reserved bacon fat. Toss gently to mix.
- Heat a nonstick frying pan. Place the bacon fat in the pan, and press the potato mixture on top.
- Brown over medium-low to med heat until golden brown on the bottom. This will probably take about 1/2 hour.
- Invert onto a plate and serve.
- Yield: 4 servings.
