Cappuccino Chip Muffins

2 Cups all-purpose flour
3/4 Cup sugar
2 1/2 Tsp baking powder
2 Tsp instant espresso coffee powder
1/2 Tsp salt
1/2 Tsp ground cinnamon
1 Cup milk (scalded and cooled, if desired)
1/2 Cup lightly salted butter or margarine, melted
1 Egg, lightly beaten
1 Tsp vanilla
3/4 Cup semisweet chocolate chips
  • Prehead oven to 375oF.
  • Grease twelve 3x1 1/4-inch muffin cups.
  • In large bowl, stir together flour, sugar, baking powder, espresso coffee, salt, and cinnamon.
  • In another bowl, stir together milk, butter, egg, and vanila till blended.
  • Make a well in the center of dry ingredients. Add milk mixture and stir to combine.
  • Stir in chips.
  • Spoon batter into prepared muffin cups. Bake 15 to 20 minutes or until toothpick comes out clean.

  • Yield: 12 muffins.
