Cacciatore



3/4 Cup sliced mushrooms
1/2 Tsp salt
1/2 Cup tomatoes, cut up
1 Garlic clove, crushed
1/2 Cup green pepper, chopped
4 Chicken breasts, boned
1/4 Cup onion, chopped
2 Tsp cornstarch
3 Tbsp red wine
2 Tbsp cold water
1/2 Tsp oregano
  • In skillet, combine first 9 ingredients.
  • Place skinned and boned chicken breasts in skillet and sprinkle with additional salt.
  • Bring to boil, reduce heat, cover, and simmer for 25 minutes or until done.
  • Remove chicken and sprinkle with paprika.
  • Combine with cornstarch and water. Stir until thickened. Cook one minute more.

  • Yield: 4 servings.
