Light Cheese Pie
2 Cups nonfat cottage cheese
3/4 Cup frozen egg substitute
1/2
Cup neufchatel cheese
1/2
Cup sugar
1/4
Tsp vanilla
1/3
Cup nonfat vanilla yogurt
1 Tsp sugar
1/8
Tsp lemon juice
Preheat oven to 300
o
F.
Combine first 5 ingredients in electric blender. Process for 1 minute or until smooth.
Pour mixture into a 9-inch pie plate coated with cooking spray.
Bake for 35 minutes or until edges are set.
Combine yogurt, 1 tbsp sugar, and lemon juice. Stir well.
Spread evenly over pie.
Bake at 300
o
F for an additional 5 minutes.
Cool for 15 minutes. Cover and chill at least 2 hours.
