Light Cheese Pie
2 Cups nonfat cottage cheese
3/4 Cup frozen egg substitute
1/2 Cup neufchatel cheese
1/2 Cup sugar
1/4 Tsp vanilla
1/3 Cup nonfat vanilla yogurt
1 Tsp sugar
1/8 Tsp lemon juice |
- Preheat oven to 300oF.
- Combine first 5 ingredients in electric blender. Process for 1 minute or until smooth.
- Pour mixture into a 9-inch pie plate coated with cooking spray.
- Bake for 35 minutes or until edges are set.
- Combine yogurt, 1 Tbsp sugar, and lemon juice. Stir well.
- Spread evenly over pie.
- Bake at 300oF for an additional 5 minutes.
- Cool for 15 minutes. Cover and chill at least 2 hours.
