Low-Calorie Turkey Broccoli Lasagna


30 Oz frozen chopped broccoli
16 Oz ricotta cheese, part skim milk
2 Cup cooked turkey, chopped
2 Cup spaghetti sauce
8 Oz mozzarella cheese, part skim milk
1/4 Cup parmesan cheese
  • Thaw broccoli and squeeze out any liquid.
  • Put about 1/3 of the broccoli in the bottom of a lightly oiled casserole.
  • Spread half of the ricotta over the broccoli. Sprinkle on half the turkey.
  • Spoon on 1/2 the spahgetti sauce. Top with half of the mozzarella cheese.
  • Repeat layering process using another 1/3 of the broccoli, the rest of the ricotta, turkey, spaghetti sauce, and mozzarella cheese. Finish with the final 1/3 broccoli.
  • Sprinkle with parmesan.
  • Bake at 350oF for 45-50 minutes.

  • Yield: 8 servings.
