Coconut Pie
2 Cups milk
3/4 Cup sugar
1/2 Cup
Bisquick
, baking mix
1/4 Cup margarine
4 Eggs
1
1/2
Tsp vanilla
1 Cup coconut flakes, or shredded coconut
Heat oven to 350
o
F.
Lightly grease 9x1-1/4 or l0x1-1/2 pie plate.
Place all ingredients in blender. Cover and blend on high speed for 15 seconds. Pour into pie plate.
Bake until golden brown and knife inserted in center comes out clean, approximately 50 to 55 minutes.
Refrigerate any remaining mixture.
Variation: For
impossible
chocolate coconut pie, add 2 tablespoons cocoa.
