Impossible Coconut Pie

2 Cups milk
3/4 Cup sugar
1/2 Cup Bisquick, baking mix
1/4 Cup margarine
4 Eggs
1 1/2 Tsp vanilla
1 Cup coconut flakes, or shredded coconut
  • Heat oven to 350oF.
  • Lightly grease 9x1-1/4 or l0x1-1/2 pie plate.
  • Place all ingredients in blender. Cover and blend on high speed for 15 seconds. Pour into pie plate.
  • Bake until golden brown and knife inserted in center comes out clean, approximately 50 to 55 minutes.
  • Refrigerate any remaining mixture.

  • Variation: For impossible chocolate coconut pie, add 2 tablespoons cocoa.
