Corn and Tomato Broth


2 Tsp olive oil
1/2 Small onion, peeled
2 Ripe tomatoes, seeded and chopped
3 Cups chicken broth
1 1/2 Cup fresh corn
2 Tbsp lemon or lime juice
Salt
1/4 cup cilantro or parsley leaves, chopped
  • Heat the olive oil in a pot. Finely chop the onion and add to the oil.
  • Cover and simmer for 5 minutes or until tender.
  • Add tomatoes and simmer for 5 minutes.
  • Add chicken broth and bring to a simmer.
  • Then add corn and simmer for 4 minutes.
  • Remove soup from heat.
  • Add the lime or lemon juice and season to taste with salt. Garnish with cilantro or parsley leaves.

  • Yield: 2 servings.
