Apple Sour Cream Ring
(looks can be deceiving—this cake is addictive!)

1/2 Cup walnuts, chopped
1 Tsp cinnamon
1 Apple, sliced
1/2 Cup margarine, low fat
2 Cup flour
1 Cup sour cream
2 Eggs
1 Tsp baking powder
1 Tsp baking soda
1 Tsp vanilla
  • Combine nuts, cinnamon, and 1/2 cup sugar in a small bowl and set aside.
  • Peel and core apple, slice thin, and set aside.
  • Beat butter and 1 cup sugar. Add flour and remaining ingredients and beat for 3 minutes.
  • Spread half of dough in bottom of a greased and floured 9" tube pan.
  • Sprinkle with half of the nut mixture. Spread the sliced apples over the nut mixture.
  • Spread rest of the dough on top and sprinkle with remaining nut mixture.
  • Bake in a 350oF oven for 60 to 70 minutes.

  • Yield: 10 servings.
