Individual Cheesecakes

1 Pkg vanilla wafers
16 Oz cream cheese
3/4 Cup sugar
1 Tsp vanilla
  • Line a 6-cavity muffin tin with cupcake liners.
  • Place 1 vanilla wafer in the bottom of each cupcake liner.
  • Cream together the cream cheese, sugar, eggs, and vanilla.
  • Bake at 375oF for 15 minutes.
  • Can be topped with your choice of pie filling.

  • Yield: 6 cakes
