Individual Cheesecakes
1 Pkg vanilla wafers
16 Oz cream cheese
3/4 Cup sugar
1 Tsp vanilla

- Line a 6-cavity muffin tin with cupcake liners.
- Place 1 vanilla wafer in the bottom of each cupcake liner.
- Cream together the cream cheese, sugar, eggs, and vanilla.
- Bake at 375oF for 15 minutes.
- Can be topped with your choice of pie filling.
- Yield: 6 cakes
