Lime and Thyme Potato Salad

3 Cups potatoes, cooked and cubed
1/3 Cup mayonnaise
1/4 Cup sour cream
1/2 Tsp lime peel, finely shredded
1 Tbsp fresh thyme
1/4 Tsp salt
1/4 Tsp pepper
  • Mix ingredients together and chill.
  • If salad seems too stiff after chilling, stir in 1 to 2 splashes of milk.

  • Yield: 4 servings.
