Lithuanian Raisin Bread
(Razinu Pyragas)


2 Cups milk, scalded
3/4 Cup Egg Beaters, or 3 whole eggs
2 Yeast packages
3/4 Cup sugar, divided
1 Cup white raisins
6 1/2 Cup flour
1/2 Cup melted butter
1 Egg yolk
1 1/2 Tbsp water
  • Cool milk to lukewarm. Dissolve yeast and 3/4 cup sugar in milk.
  • Add 3 cups of flour. Mix well.
  • Cover and let rise in warm place until light and bubbly.
  • Combine eggs, 1/2 cup sugar, salt, raisins, and butter.
  • Beat mixture well and add to dough. Add remaining flour and knead well.
  • Let rise until double in bulk. Punch down. Shape into 2 loaves and place in pans.
  • Allow to rise again. Brush top with glaze of egg yolk and 1 tbsp water. Bake 50 minutes at 350oF.

  • Yield: 32 servings.
