Oven Fried Chicken
3 1/2 Lbs boneless, skinless chicken breast
1 Cup instant mashed potato flakes
1 Tsp salt
1/4 Tsp pepper
1/4 Tsp rosemary
1/2 Tsp poultry seasoning
1/4 Cup egg substitute, slightly beaten
1 Tsp lemon juice
  • Heat oven to 375oF.
  • In plastic bag, combine potato flakes and seasonings.
  • In shallow bowl, combine egg substitute and lemon juice.
  • Dip chicken pieces in egg mixture. Shake in plastic-bag mixture.
  • Place on a greased cookie sheet and bake uncovered for 60 to 70 minutes.

  • Yield: 6 servings.
