Pickled Beets
5 Medium beets
1/2 Cup vinegar
2 Tbsp sugar
1/2 Tsp salt
1 Small bay leaf
1 Small onion, thinly sliced
1/4 Cup beet cooking water
  • Cook beets. Peel and slice.
  • Combine other ingredients and bring to boil and simmer 5 minutes.
  • Pour sauce over beets and chill.

  • Yield: 4 servings.
