Grandma's Pie Crust Cookies
Pie Crust
2 Cups flour
1 Tsp salt
1 Cup shortening
1/2 Cup ice water

- Sift together flour and salt.
- Cut in shortening. Add ice water.
- Mix well and chill.
- Yield: 2 pie crusts.

- Preheat oven to 350oF.
- Keeping one pie crust in the refrigerator, roll out the other pie crust into a 10x7 rectangle.
- Spread butter or margarine over crust up to 1/4 inch from the edges.
- Sprinkle liberally with cinnamon and sugar mixture.
- Roll up crust starting at the shorter edge to give a 10-inch long roll.
- Slice roll into 1/2-inch slices.
- Repeat with other pie crust.
- Place slices on an ungreased cookie sheet.
- Bake until golden brown.
- Yield: approximately 40 cookies.
