Pineapple Right-Side-Up Cake
8 Oz pineapple chunks in juice, crushed, undrained
1 1/2 Cup flour
1/2 Cup sugar
2 Tsp baking powder
1/4 Tsp salt
1/4 Cup skim milk
3 Tbsp margarine, melted
1 Egg, beaten
1/2 Tsp vanilla extract
1/4 Cup dark brown sugar, packed |
- Drain pineapple, reserving 1/4 cup juice. Set both aside.
- Combine flour and next 3 ingredients in a large bowl and stir well. Make a well in center of mixture.
- Combine reserved pineapple juice, milk, and next 3 ingredients in a bowl. Add to dry ingredients. Stir just until dry ingredients are moistened.
- Spoon batter into a 9-inch square baking pan coated with baking spray.
- Top with pineapple. Sprinkle with brown sugar.
- Bake at 350oF for 31 minutes or until a wooden pick inserted in center comes out clean.
- Cool 10 minutes in pan on a wire rack.
- Yield: 9 servings.
