Pork Inihaw

2 Lbs pork, sliced into strips or cut in cubes (fatty is best)

Marinade
1 Cup white vinegar
2 Tbsp garlic, finely minced
1/2 Cup sugar
1/2 Cup soy sauce

Dip
1 Cup white vinegar
1 Tbsp garlic, finely minced

  • Marinate pork overnight. Remove pork from marinade.
  • Place pork strips or cubes on bamboo skewers that have been soaked in water for 30 to 45 minutes.
  • Preheat oven to 425oF for 40 minutes. Broil pork for 15 minutes, browning both sides (a barbecue grill is preferable).
  • Serve with hot vinegar dip.

  • Yield: 6 servings.
