Fluffy Ruffles


1 Pkg sugar-free gelatin, lemon flavor
13 1/2 Oz evaporated skim milk
1 Tbsp lemon juice
1/2 Tsp lemon rind
2/3 Cup sugar
1/2 Tsp vanilla
1/2 Graham crackers, crushed
  • Dissolve lemon gelatin in one cup hot water and add the lemon juice and lemon rind. Refrigerate until it gets like syrup.
  • Take the evaporated milk (well-chilled) and whip all the milk. Add the sugar and the vanilla to the milk. Mix the milk and jello together.
  • Spread half the graham cracker crumbs on the bottom of the dish .
  • Pour mixture into the dish and sprinkle the rest of the grahamcracker crumbs on top. Refrigerate.

  • Yield: 10 servings.
