1 Pkg sugar-free gelatin, lemon flavor

Oz evaporated skim milk
1 Tbsp lemon juice
1/2 Tsp lemon rind
2/3 Cup sugar
1/2 Tsp vanilla
1/2 Graham crackers, crushed
Dissolve lemon gelatin in one cup hot water and add the lemon juice and lemon rind. Refrigerate until it gets like syrup.
Take the evaporated milk (well-chilled) and whip all the milk. Add the sugar and the vanilla to the milk. Mix the milk and jello together.
Spread half the graham cracker crumbs on the bottom of the dish .
Pour mixture into the dish and sprinkle the rest of the grahamcracker crumbs on top. Refrigerate.
Yield: 10 servings.
