3 1 Cup bulgar wheat
2 Cups hot water
2 Tbsp olive oil
1/4 Cup lemon juice
1 Tsp minced garlic
1 Tsp salt
1/4 Tsp black pepper
1 Medium-sized tomato, finely chopped
6 Scallions, chopped
2 Cups fresh parsley, coarsely chopped
  • In a large bowl, combine bulgar wheat and water. Let stand for 20 to 30 minutes or until the water is completely adsorbed.
  • Add oil, lemon juice, mint, garlic, salt, and pepper. Mix until thoroughly combined.
  • Add the remaining ingredients and toss until blended.
  • Cover and chill for at least 1 hour before serving.

  • Yield: 6 servings.
