Tuna or Salmon Rice Pie
1/3 Cup rice 3/4 Cup skim milk 1 Cup water 2 Cups frozen chopped broccoli, defrosted, well-drained 1/8 Tsp salt 1/2 Tsp parsley, freeze-dried 1 Tsp margarine 1/4 Tsp pepper 2 Eggs 4 Slices lowfat swiss cheese 6 1/2 Oz salmon, canned; or tuna, in water |
- Bring rice to boil in salted water, cover and simmer for 14 minutes. Mix with fork and stir in margarine and 1 beaten egg.
- Place in 9-inch pie pan sprayed with vegetable pan spray. Press against sides and bottom of pan to make crust.
- Spread tuna or salmon evenly over rice.
- Heat milk and broccoli to a simmer. Add seasonings.
- Beat remaining egg. Gradually stir in milk mixture. Pour over tuna/salmon.
- Layer slices of cheese over top. Bake at 350o for 25 minutes.
- Yield: 6 servings.
