Sometimes there is a call for a double decker bus... which is
an entirely different creation.
A double decker begins with a slab of rich dark chocolate
cake. Taking out a combination slab of ice cream - both vanilla
and chocolate, a square is cut, such that it fits over the
dark cake. Sometimes the Bartender begins with the vanilla layer,
sometimes it begins with a different flavor, but always, the ice
cream is placed carefully on the cake.
A square of angel cake is placed on top of the ice cream.
Hot chocolate sauce is carefully spooned over the ice cream cake
sandwich until it covers the edges entirely.
A second sandwich is made, this time with the angel cake
on the bottom, a slice of dark chocolate ice cream in between,
and a slice of chocolate cake to top off.
The two squares are placed with edges touching, in a double
diamond form.
A double broiler is heated... gently, and a bar of white milk
chocolate is melted, along with a separate square of butterscotch
is thrown into a glass bowl. This white sauce is now spooned
onto the cake...
The black porcelain dish now carries two separate squares of
icecream sandwiches, while the sauces have slowly slid over the
sides, and slowly mix on the plate surface.
The final layers of dark chocolate and light butterscotch are
drizzled over the two squares...
sometimes, sprinkles are added... but only cherry red ones -
they show up better.
