You know when we are afraid, Lord.
When we pass through the deep waters, when the fire rages around us, when hard
trials press upon us, we would hear again your words: “I am with you”. Your
presence is our only hope amid the giants of war, poverty and disease. Yet we have
your promise and on that we can surely stand. Bless us this day with the
courage that flows from faith in you. We ask this in Jesus’ name. Amen.

The bread used in Communion today was baked by Ethel
Clancy.
The flag of the Philippines has two equal horizontal
bands of blue (top) and red with a white equilateral triangle based on the
hoist side; in the center of the triangle is a yellow sun with eight primary
rays (each containing three individual rays) and in each corner of the triangle
is a small yellow five-pointed star.
Filipino Pandesal Bread (bread machine)
½ c. water ¼
c. evap. Milk
½ c. milk 1
egg
½ c. sugar ¾
tsp. salt
5 T. softened butter 1
T. oil
4 c. flour 3
tsp. Yeast
bread crumbs
Combine the water, evaporated milk and mild and heat in microwave for 35
seconds. Run tap water over the egg for 30 seconds to warm it. Add all
ingredients (except bread crumbs) in the order suggested by the manufacturer.
The dough is supposed to be somewhat sticky. Spray two baking sheets with
non-stick cooking spray; preheat oven to 375 degrees. When the dough is ready,
scoop out a small amount (about the
size of an ice-cream scoop) and roll in bread crumbs in an oval shape; place on
baking sheet. Cover and leave to rise in warm place until doubled. Bake for 10
– 15 minutes, until golden brown.
Pandesal is
the most popular yeast-raised bread in the Philippines. Its taste and texture
closely resemble those of the very popular rolls of the Dominican Republic
called Pan de Agua and Mexico’s most popular type of bread Bolillos for the
reason that they all use a lean type of dough and follow similar techniques
that were learned from Spanish or Spanish trained bakers early in their
history.
