RUNNING OFF THE BOILER
This is how I would usually run off the boiler into my counter flow chiller. A manual method exists too.
Often I route it the way shown above but don't use the pump. The reason for this is that in Pretoria my cold tap water varies between about 12°C in mid winter and 20°C in high summer. If I use a second chiller coil immersed in an ice bath during run off then I have sufficient cooling capacity to pump the wort faster. If I don't have an ice bath I may just run it through slower (i.e. pump off) to achieve that extra degree or two of chilling.
