PenSans Wit is brewed in the tradition of the Belgium "white beers". These are often referred to as "Wit Ales" or "Biere Blanche". Whatever you call it, its awsome !
Now, I drank a fine example of this style on draught while in Amsterdam last year and knew there and then that I had to brew one of these beers. Since then I have periodically bought a bottle of the classic example "Hoegaarden Wit" which is a bottle conditioned version. And then I surf the net looking for info on how to brew one of these and come up with a handful of articles which all contain different parts of the puzzle. There comes a time though when you've just got to go out there and do something . . . and in this case I'm rather glad I did !
The recipe formulation is a challenge on its own and the process to make it sees lots of unmalted ingredients without husks sloshing around your mash tun. Not good for a man used to single temperature infusion mashes !
And then there's this mystical ingredient (well it is here in Southern Africa) called Curacao orange peel. Mine never made it in the mail so I eventually made up my own and the recipe page gives insights into this aspect.
So, what's it like you ask to have a tall glass of your own Wit beer in front of you ?! Words cannot describe.
