RECIRCULATE THE MASH TUN
Recirculating the mash tun is useful for evening out temperature differences in the mash and for ensuring a clear run off prior to sparging. By the way, I don't allow the wort to splash back into the mash tun, I immerse the sparge arm about 1 cm below the surface to help avoid oxidation problems.
