CHRISTMAS LOG         

Ingredients

300g             Morning coffee biscuits (crushed)

100g             Mixed fruit

 50g              Nuts (preferably walnuts)

 75g              Cherries

125g             Dates (chopped up)

100ml           Vermouth

100ml            Tinned milk (light)

150g             Chocolate (for covering log)

1 tblsp.          Icing sugar or coconuts

Parchment (or waxed) paper to shape log

Method

Mix all the ingredients together except for the chocolate and coconuts. 

Shape with waxed paper into a log shape.

Chill for several hours - then cover with melted chocolate and a sprinkle of coconuts to decorate.
