HOMEMADE CHRISTMAS MINCEMEAT

Ingredients

200g                 Sultanas

200g                 Currants

200g                 Raisins

200g                 Apples

1/2 cup             chopped mixed candied peel

 50g                  Whole almonds (not blanched)

1/2 teaspoon    Mixed spice

1 teaspoon       freshly grated nutmeg

4 tablespoons   Rum or brandy

Juice and rind of 1/2 lemon

Juice and rind of 1/2 Orange

 

Method

Prepare clean dry jars, preferably sterilizing  them.

Peel and core the apples.  Roughly chop up the raw almonds. 

Mix all the ingredients together in a mixing bowl, mixing well.

Place half of the mixture and blend in a food processor until the mixture has become paste-like in texture.  Mix with the other half (unprocessed) mixture.

Place mincemeat in clean, dry, jars.  The quantities given are enough to fill about 3 medium jars.

Keep refrigerated.
