Categories: Yield: 4 Servings 2 lb (to 3) chicken; cut in eight .. pieces 3 tb Orange marmalade apricot .. jam or pineapple jam no .. sugar added 3 tb Orange juice concentrate 1/4 ts Grated gingeroot 1/2 ts Gresh lemon juice 2 ts Garlic; crushed 1/4 ts Paprika 1 tb Soy sauce 2 ts Cornstarch -=MIXED WITH=- 1 tb Cold water Combine jam, orange juice, gingerroot, lemon juice, garlic, paprika and soy sauce and pour over chicken in a baking dish. Bake, covered with vented foil, 30 minutes at 350°, basting once. Drain juices and combine with cornstarch mixture in a small saucepan; cook until thickened. Serve arranged over brown rice.
