Psychic is too cover its fighting weakness, HP Fire for its bug weakness. Moonlight to heal, since umbreon has good defences. It can be replaced by Shadow Ball though. Return for a powerfull attack. Also, you can use the annoyer set: Umbreon holding Leftovers, Mean look, Toxic, Faint Attack and Confuse Ray, it's mainly to annoy. Choose what fits your team best.
