Here is how I approximize menu item 24 from Fat Humphreys Cafe in Albuquerque.
You will need:
- 1 1/2 pounds of sirloin steak
- One 6 oz. jar of Green Giant sliced mushrooms drained
- Four french sandwich rolls from the baker (not the brand name ones in the plastic bags)
- Sliced provolone cheese
- Salt and Pepper to taste
Here's how you do it:
- Slice the steak removing fat and gristle
- Brown the steak in a frying pan over medium heat
- Add salt, pepper and mushrooms and continue heating
- Split each roll down the middle with a bread knife
- Spoon a generous portion of meat mixture into each roll
- Top with provolone cheese and place in broiler to lightly toast
Notes:
Deglaze the frying pan with your favorite wine when meat is cooked.
Keep your eye on them when they're in the broiler. They can go from
perfect to ruined in a very short time.
Wrap the warm, finished sandwiches in aluminum foil to blend the flavors
and soften the bread.
