Green Chili Stew

Here is my recipe for green chili stew.

You will need: Here's how you do it:
  1. Boil the beans covered with water for a few minutes and rinse
  2. Return the beans to the stove with 5 cups of water and continue boiling
  3. When the beans are nearly done (slightly crunchy) add the potatoes
  4. Brown the ground beef with the onion and garlic
  5. When the potatoes and beans are done add the beef mixture and spices
  6. Simmer about 10 minutes and serve with warmed tortillas
Notes:
Add water as necessary to keep the stew under 1/2" of water.
Add the onions later in the process to keep them crisper.
Beans take a while to cook and will go faster the longer you presoak them.
