Green Chili Stew
Here is my recipe for green chili stew.
You will need:
- One pound of ground beef
- Four average size Russet potatoes peeled and cut in one inch cubes
- One medium size yellow onion chopped
- 3-4 cloves of garlic minced
- 4-6 green chilies roasted, peeled and chopped
- One cup dried pinto beans
- Pinch of oregano
- Salt and Pepper to taste
Here's how you do it:
- Boil the beans covered with water for a few minutes and rinse
- Return the beans to the stove with 5 cups of water and continue boiling
- When the beans are nearly done (slightly crunchy) add the potatoes
- Brown the ground beef with the onion and garlic
- When the potatoes and beans are done add the beef mixture and spices
- Simmer about 10 minutes and serve with warmed tortillas
Notes:
Add water as necessary to keep the stew under 1/2" of water.
Add the onions later in the process to keep them crisper.
Beans take a while to cook and will go faster the longer you presoak them.
