South of the Border (SOB) Chicken
Here is my recipe for SOB Chicken
You will need:
- One whole chicken cut up and rinsed (do not use giblets)
- One dozen corn tortillas
- One medium size yellow onion chopped
- One can of Campbell's Cream of Mushroom Soup(see option below)
- One 7 ounce can of diced green chilies
- One cup milk
- One small can of enchilada sauce (see option below)
- Approximately 3/4 pound of grated cheddar cheese
Here's how you do it:
- Simmer the chicken in a pot of water until cooked (crockpot works well)
- Let it cool, remove the bones and skin and tear into bite size bits
- Combine soup, onion, milk, chili, sauce and about 1/2 cup broth from pot
- Butter the inside of a large casserole dish
- Starting with the chicken, make layers of chicken, sauce, tortillas
- and cheese. Continue layers ending with sauce then cheese.
- Bake for 1 1/2 hours at 300 degrees (covered)
Notes:
This recipe will serve six, but any additional casserole can be frozen
for later use. It can also be stored in the refrigerator for up to 24
hours before baking. Some cooks may prefer two cans of soup. The
enchilada sauce can be substituted with Pace or another picante or
salsa.
