Zucchini Bread
From Grandma Cottle

1 cup margarine
2 cups sugar
2 cups shredded zucchini
3 tsp vanilla
3 eggs, beaten until foamy
3 cups flour
1/2 tsp salt
1/2 tsp baking powder
1 tsp baking soda

Beat all ingredients except zucchini.  Once blended then fold in zucchini.  Bake at 350 for 1 hour.
